Food today is so different from the food our ancestors ate. The ground our ancestors used was rich and pure. The food that grew on this land was rich in minerals because of the rich top soil however that same land today is depleted of it's nutrients. The agricultural industry has tried to compensate by adding to our seeds and ground but we still do have the nutrient rich food of the past. The FDA changes it's standard of what we should eat but do they really know. What factors effect our food: growing conditions (weather), ground nutrients, seeds, fertilizers or lack of, and pesticides? However the FDA does not have anyway to take these factors into consideration.
The vitamin industry has been blossoming for just this reason. They have convinced all of us that we need to supplement, supplement and supplement some more. But are the vitamins and minerals we are popping making us healthier or not? That is up for debate. Some vitamin brands are good, others are useless and some great. How do you tell? I was once told if you put a vitamin in the oven at 300 degrees for 20 minutes a vitamin that is full of fillers with start bubbling black stuff (I was told that it is filler). What I have found is that it is really hard to tell good from bad and price point does matter but is not a only factor consider.
Flourless eating can become a way of life for everyone. Celiacs eat a variety of flour, not very high quality and the rest of us rely on the old standby of bleach white wheat flour. Bizzy Lizzy has started their own revolution to convince the world they will not miss it. Start relying on oatmeal and flax seed to make yourself feel better.

The journey continues
I have to say this is not hard at all. I really have not missed anything. Friends ordered pizza the other night and I ate some left-overs and was completely happy. I think the reason I do not feel it is so difficult is because I see an end point if I choose to use it. I placed the challenge on me for 30 days there are people who have to eliminate common foods from their diet for life.
I met a couple the other day that have a terrible reaction to dairy and they were telling how hard it is to find foods without it. I would have to agree. Dairy bi-products are in so many foods. I think the FDA does a pretty good job setting guidelines but I am not sure everyone follows the rules.
I know for me I go overboard because I empathize with individuals with food allergies. I am very fortunate I do not and know very few that do personally. I have met many along the way. I find it amazing that as people come to my table I begin to remember them and what they can and can not have and just like a mother tell them "NO". They always laugh because I do it light hearted and in good spirit but I do not want my clients to have problems.
I snacked on my goodies yesterday at the market along with Sugar Peas and Fresh Michigan Strawberries. We ate supper at the Mongolian Grill. The only concerns I had their were sauces. It is possible some could be thickened with flours, so I was very picky. It was delicious and we had a nice dinner as a couple in Royal Oak. Yummy for you tummy.
